Grilled Mahi-Mahi

Grilled Mahi-Mahi

Ingredients

For 1 people

  • 3/4 cup(s) olive oil
  • 4 tablespoon(s) red wine vinegar
  • 1/3 tablespoon(s) fresh chopped dill
  • 1 dash(es) salt, to taste
  • 1 dash(es) pepper, to taste
  • 1 cucumber, sliced
  • 1/4 cup(s) red onion, diced
  • 1/4 cup(s) diced tomatoes
  • 1/4 cup(s) chicken stock
  • 1 cup(s) tomato juice or bloody Mary mix
  • 1 6- to 8-oz., mahi fillet
  • 2 tablespoon(s) whole butter, softened

Directions

Mix first four ingredients and pour over vegetables; toss gently. Combine stock, tomato juice and salt and pepper and simmer over medium heat until reduced by half. Grill mahi until done; brush with 1 oz. butter. Place mahi in bowl. Ladle over it tomato bouillon and top with relish.
