Stuffed Oysters

An elegant appetizer that can easily be double, tripled or increased even more for a party crowd.


Stuffed Oysters

Ingredients

For 1 people

  • 1 onion, sliced
  • 1/4 roasted red pepper, cut into strips
  • 1 handful fresh spinach, chopped
  • 2 slices prosciutto ham, cut into strips
  • 4 mushrooms, sliced
  • 2 teaspoon(s) garlic
  • 2 ounce(s) melted butter
  • 1 cup(s) Japanese breadcrumbs
  • 1/8 teaspoon(s) basil
  • 1/8 teaspoon(s) thyme
  • 1/8 teaspoon(s) oregano
  • 6 oysters on the half shell
  • 3 slices provolone cheese, halved

Directions

1. Sauté onions, peppers, spinach, ham and mushrooms in garlic butter. Add breadcrumbs and spices.
2. Stuff mixture into oyster shells with oysters.
3. Place in 400-degree oven for 7 minutes.
4. Remove, top with provolone.
5. Bake an additional 1 1/2 minutes, until cheese melts.
6. Drizzle with garlic butter and serve.
