Apricots are one of those foods that are often forgotten. And sadly so. Sweet baked apricots served with ham is an easy, special brunch item, or you can serve it a la mode for a sweet summer treat.

Ingredients
For 6 people
3 3/4 cup(s) 2 (15 oz.) cans apricot halves
1/2 cup(s) butter
1 cup(s) packed brown sugar
1/4 cup(s) all-purpose flour
32crushed butter-flavored crackers (1 1/3 cups)
Directions
Drain apricots, reserving 3/4-cup juice. Place apricots in a greased 11-in. x 7-in. x 2-in. baking dish. Melt 1/2-cup butter; add the brown sugar, flour and reserved juice. Pour over apricots.
Bake, uncovered, at 350 degrees for 20 minutes. Melt remaining butter; toss with crackers crumbs. Sprinkle over top. Bake 15-20 minutes longer or until golden brown.
