In a small mixing bowl, lightly beat egg and egg whites. Add 1 tbsp. salsa, and blend well. Lightly coat skillet with cooking spray and sauté diced bell pepper and onion for 2-3 minutes until softened. Add the egg mixture and cook with the vegetables stirring occasionally, until set. Place pita on a plate and spoon egg mixture on top. Top with cheese and microwave until cheese is melted. Top with remaining salsa.
