Just because your dietary needs have changed doesn't mean you have to give up your favorite foods. These heart-healthy, baked French fries are just as good as your favorite deep fried pub fries.

Preheat oven to 400 degrees. Scrub potatoes thoroughly. Cut each potato lengthwise into 6 wedges. Place wedges in a medium bowl and cover with cold water. Let stand 30 minutes. Drain and pat dry with paper towels. Place potatoes and oil in a medium bowl and toss to coat evenly; place potatoes on baking sheet. Sprinkle with pepper and oregano. Bake 45 to 50 minutes, or until potatoes are tender. Remove from oven and sprinkle with malt vinegar.
