Melt butter, soup, milk, and cheese into sauce; season with salt and pepper to taste and stir in onions and mushrooms. Into a 13x9x2 inch casserole dish empty the bag of frozen hash browns and the bag of frozen mixed veggies Pour cheese sauce on top of frozen veggies and potatoes. Sprinkle additional 1/2 to 1 cup cheese on top and bake at 350 degrees for 45 minutes to an hour.
