Baked Spinach Rice
Frozen spinach, fresh Parmesan and spices dress up your hum drum rice side and give you plenty of reason to go green. This baked casserole will be sure to please even the pickiest of eaters.
Ingredients
For 6 people
- 1 cup(s) chopped onion
- 2 tablespoon(s) butter
- 3 cup(s) cooked rice
- 1 (10 oz.) pkg. chopped spinach, cooked
- 1/2 teaspoon(s) garlic powder
- 1/2 teaspoon(s) basil leaves
- 1/2 teaspoon(s) ground thyme
- 3 large eggs
- 1/2 cup(s) freshly grated Parmesan cheese
Directions
- Cook onion in butter until tender. Add rice, spinach, garlic powder, basil and thyme.
- Beat eggs and stir into rice mixture.
- Turn into buttered 2-quart casserole. Sprinkle with Parmesan cheese.
- Bake at 375 degrees for 20 minutes.
