Baked Stuffed Grouper
Just call this dish Mr. Big Stuffed. If you're a fan of grouper when it's solo, you'll be bowled over with the addition of crab meat. It's a truly good fish dish.
Ingredients
For 4 people
- 1/4 cup(s) Japanese breadcrumbs, plus a little more for garnish
- 1 tablespoon(s) lemon juice, (about one half a lemon)
- 2 eggs
- 12 ounce(s) lump crab meat
- 12 ounce(s) heavy cream
- 6 medium shrimp, diced
- 2 ounce(s) butter
- 4 8-oz. grouper filets
- 1/4 cup(s) melted butter
- 1 Old Bay Seasoning
Directions
In a large mixing bowl combine breadcrumbs, lemon juice, eggs and salt and pepper. Fold in crab meat, being careful to not break lumps. Set aside. Place heavy cream in a double boiler or over low heat; bring to simmer. Add shrimp and butter; reduce by half. Salt and pepper to taste. Cut each grouper filet in half, then take four of the pieces and cut a slit through the middle of each but don’t cut all the way through to the ends. Place the four whole filets on a greased flat baking pan and top each with 1/4 of the crab stuffing mixture. Place the slit filets on top, letting some of the stuffing protrude through the slit. Dust with remaining breadcrumbs and Old Bay Seasoning. Drizzle with melted butter. Bake at 350 degrees for 15 minutes or until fish is cooked through. Serve on a pool of shrimp sauce.
