Beef-Stuffed Potatoes
If you are a meat and potatoes kind of person then this spuds for you! Much like shepherd's pie, this beef-stuffed taters recipe uses a different take with a similar taste. A plate of potatoes never tasted so good!
Ingredients
For 6 people
- 16 ounce(s) ground beef
- 6 tablespoon(s) butter
- 3/4 teaspoon(s) salt
- 1/8 teaspoon(s) pepper
- 6 med. potatoes, baked
- 1/4 cup(s) milk
- 1 cup(s) onion, minced
- 1 tablespoon(s) parsley flakes
- 1/2 cup(s) celery, finely chopped
- 1 1/2 cup(s) cheddar cheese soup
- 3 slices American cheese, halved
Directions
Brown beef in 1 tbsp. butter in skillet; add the salt and pepper; set aside. Cut baked potatoes in half lengthwise and scoop out pulp into large bowl. Mash and add remaining butter and the milk. Beat well and add beef and remaining ingredients, except cheese. Fill shells with the mixture and put on baking sheet. Top each with a half slice of cheese and bake in hot oven, 400 degrees, about 15 minutes.
