Cheese & Veggie Tortellini
This tasty tortellini recipe is super tasty and does not take much time to put together. If you’re in the mood for pasta this cheese and veggies dish is your perfect dinner plate solution. Enjoy less time in the kitchen and more time savoring your meal.
Ingredients
For 4 people
- 1 2/3 cup(s) Barilla cheese tortellini
- 2 tablespoon(s) extra virgin olive oil
- 1/2 cup(s) onions, finely diced
- 2 cup(s) zucchini, diced
- 1 cup(s) roasted red peppers, thinly sliced
- 1 1/8 cup(s) fresh baby spinach
- 1 cup(s) fresh tomatoes, diced
- 1/8 teaspoon(s) fresh ground black pepper
- 1 dash(es) Salt, to taste
- 1/8 teaspoon(s) Crushed red pepper flakes, to taste
- 1/3 cup(s) cherry tomatoes for garnish
Directions
Bring a large pot of water to a boil. Cook Tortellini according to directions on pkg. While Tortellini cooks: Sauté onion in oil for 5 minutes in a large skillet over medium heat. Add zucchini and pepper and cook for 3 minutes; season with salt and crushed red pepper, if desired. Add red peppers and baby spinach and sauté for 1 additional minute. Drain tortellini and mix with sauce in skillet. Stir in tomatoes and add Parmesan cheese for serving.
