Chicken Black Bean Soup

Chicken Black Bean Soup

Ingredients

For 6 people

  • 2 teaspoon(s) canola oil
  • 1 medium onion, finely chopped
  • 1 medium carrot, chopped
  • 1/2 large red pepper
  • 1 teaspoon(s) cumin
  • 1 teaspoon(s) chili powder
  • 3 3/4 cup(s) reduced sodium black beans, rinsed and drained
  • 3 cup(s) fat-free, low-sodium chicken broth
  • 16 ounce(s) jar mild salsa
  • 12 ounce(s) cooked skinless white-meat chicken, chopped

Directions

Heat oil on medium heat in a Dutch oven or soup pot. Sauté onions, carrots and peppers for 5 minutes. Stir in cumin and chili powder and cook for 1 minute. Add black beans, broth and salsa. Bring to a boil, then cover and simmer for 15 minutes. Stir in cooked chicken and simmer for 5 more minutes.
