Chicken & Mushrooms in White Sauce

Ingredients
For 4 people
- 2 boneless chicken breasts cut in chunks
- 1/2 cup(s) tomato, chopped
- 1 cup(s) mushrooms, sliced
- 2 garlic cloves, minced
- 6 teaspoon(s) dried basil
- 1 low sodium bacon, cooked and crumbled
- 1 cup(s) no salt added tomato sauce
- 2 tablespoon(s) Parmesan cheese
- 1/2 cup(s) half and half
Directions
Sauté the chicken in olive oil until browned. Turn chicken and add tomato, mushrooms, and garlic and cook on medium heat until the mushrooms start to darken. Add basil, bacon, tomato sauce, and Parmesan. Heat on low for 15 minutes. Remove from heat. Add half-and-half to mixture. Mix well. Serve over pasta.
