Chili Chicken Corn Salad

Chili Chicken Corn Salad

Ingredients

For 6 people

  • 2 fresh corn
  • 4 cup(s) chicken, cooked
  • 1 cup(s) green pepper, diced
  • 2 tablespoon(s) mayonnaise
  • 2 teaspoon(s) lemon juice
  • 1 teaspoon(s) salt
  • 1 teaspoon(s) chili powder
  • 1/4 teaspoon(s) black pepper
  • 6 lettuce leaf
  • 1/3 cup(s) cherry tomatoes
  • 1 tablespoon(s) olives

Directions

  1. Cook fresh corn and remove from ears (4 ears).
  2. Combine corn with chicken and green peppers; set aside.
  3. Blend mayonnaise with lemon juice, salt, chili powder and black pepper.
  4. Pour over corn mixture and toss gently.
