Cool Strawberry Soup

Chill out with this cool strawberry soup. Although it's the perfect summer offering, it can be enjoyed throughout the year. One spoonful and you'll know it's so berry, berry good.


Cool Strawberry Soup

Ingredients

For 4 people

  • 4 cup(s) strawberries, stem tops removed
  • 12 ounce(s) fat-free vanilla yogurt
  • 1 pinch(es) dry ginger
  • 1 juice of 1 orange
  • 5 mint leaves

Directions

Place ingredients in food processor or blender and puree until smooth. Chill and serve with a small dollop of yogurt and a mint sprig as garnish. It can be further enhanced with a shot of Grand Marnier or a couple ounces of sweet champagne.
