Country Potato Pancakes
A super spud makes a scrumptious breakfast. Morning, noon or night, these potato pancakes take country cooking to a whole new level. Enjoy them with sour cream or apple sauce.
Ingredients
For 12 people
- 3 large potatoes, peeled potato
- 2 eggs, slightly beaten
- 1 tablespoon(s) grated onion
- 1/8 cup(s) all-purpose flour
- 1 teaspoon(s) salt
- 1/2 teaspoon(s) baking powder
- 1 tablespoon(s) Vegetable oil
Directions
Finely grate potatoes. Drain any liquid. Add eggs, onion, flour, salt and baking powder. In a frying pan, add oil to the depth of 1/8 in.; heat over medium-high at 375 degrees. Drop batter by heaping spoonfuls in hot oil. Flatten to form patties. Fry until golden brown then turn and cook other side. Serve immediately.
