Dijon Egg Salad
Egg dressing can pull double duty on a sandwich or a salad. You'd be hardboiled to find a tastier dressing for your salad than this egg recipe with notes of dijon mustard, olives and fresh herbs.
Ingredients
For 2 people
- 6 hardboiled eggs, grated fine or sieved
- 1/3 cup(s) minced pimiento-stuffed olives
- 1/4 cup(s) plus 1 tbsp. mayonnaise
- 2 tablespoon(s) minced scallions
- 2 tablespoon(s) minced parsley
- 3 teaspoon(s) prepared Dijon mustard
- 1 dash(es) salt, to taste
- 1 dash(es) freshly ground black pepper, to taste
- 1 lettuce leaves
Directions
- Combine all ingredients in a medium bowl, and mix thoroughly. Refrigerate, covered, at least 30 minutes.
- Leftovers can be kept for up to a couple of days.
