Edamame Shrimp Salad
You'll go "soy" nuts for this shrimply irresistible, low-fat salad. It's got plenty of delicious veggies, yummy edamame and tangy flavors like cilantro and lime!
Ingredients
For 5 people
- 1 cup(s) edamame, shelled
- 16 ounce(s) chopped boiled shrimp
- 1 3/4 cup(s) cannellini beans, rinsed and drained
- 1 cup(s) cherry tomatoes, halved
- 2 tablespoon(s) chopped red onion
- 4 ounce(s) fresh cilantro, chopped
- 4 ounce(s) fresh cilantro, chopped
- 2 2/3 floz fresh lime juice
- 1 tablespoon(s) olive oil
- 1/2 teaspoon(s) salt, to taste
Directions
Combine edamame, shrimp, beans, tomatoes, and onions in a large bowl. In a separate bowl, combine remaining ingredients and blend. Pour dressing over edamame mixture and toss gently to combine. Cover and chill. Enjoy!
