Fabulous Potato Salad
Fabulous darling, simply fabulous! Pile on the potatoes with this salad. Always a good side dish, the savory potato salad is certainly worth few minutes of preparation.
Ingredients
For 1 people
- 6 medium red potatoes, unpeeled
- 1 teaspoon(s) salt
- 4 diced raw bacon
- 1/2 cup(s) diced onion
- 1/2 tablespoon(s) cornstarch or flour
- 4 teaspoon(s) granulated sugar
- 1 teaspoon(s) salt
- 1/4 teaspoon(s) pepper
- 1/4 cup(s) cider vinegar
- 4 floz water
- 1/4 cup(s) minced onion
- 2 tablespoon(s) snipped parsley
- 1 teaspoon(s) celery seeds
- 1/2 cup(s) sliced radishes
Directions
- Cook potatoes in their jackets in boiling water with 1 tsp. salt in covered saucepan until fork tender, about 35 minutes.
- Peel and dice or partially mash potatoes. In small skillet, fry bacon until crisp. Add diced onion and sauté until tender but not brown.
- In bowl, mix cornstarch or flour, sugar, 1 tsp. salt and the pepper. Stir in vinegar and water until smooth. Add to bacon; simmer, stirring until thickened. Pour hot dressing over potatoes and add 1/4 cup minced onion, parsley, celery seeds and radishes.
