Ginger Chicken
This chicken dish is poultry in motion. Ginger and garlic give healthy chicken breasts and Asian flair, and served over rice you'll have a savory, low-carb, heart-healthy meal that the whole family will love.
Ingredients
For 4 people
- 4 boneless chicken breasts
- 1/3 cup(s) fresh grated ginger
- 1 tablespoon(s) fresh chopped garlic
- 3/4 cup(s) extra virgin olive oil
- 1/4 cup(s) lemon juice
- 1 dash(es) salt, to taste
- 1 dash(es) freshly cracked black pepper, to taste
Directions
1. Place chicken in a baking dish or gallon zipper-lock bag.
2. Combine remaining ingredients.
3. Place ingredients in baking dish or bag and make sure chicken breasts are thoroughly coated. Marinate for 6-10 hours in refrigerator.
4. Grill or bake in 325-degree oven until done.
