Golden Chicken-Salad Panini
All chicken salad is not created equal. This pared down version of a normally fattening favorite is served on panini, making it even more appetizing.
Ingredients
For 4 people
- 2 1/2 cup(s) chicken breast, cooked and chopped
- 4 tablespoon(s) light mayonnaise
- 2 tablespoon(s) bacon bits
- 2 tablespoon(s) thin green onion slices
- 2 tablespoon(s) light ranch salad dressing
- 4 multigrain panini bread slices
- 8 thin tomato slices
- 4 reduced fat sharp cheddar cheese, sliced
Directions
- Mix chicken, mayonnaise, bacon, and onion and dressing; spread onto 4 open panini. Top with tomatoes, cheese and remaining bread.
- Cook in preheated grill pan or skillet sprayed with cooking spray on medium heat until golden.
