Golden Lentil Soup

Ingredients
For 8 people
- 2 tablespoon(s) olive oil
- 1 onions, chopped
- 1 cup(s) diced carrots
- 1 cup(s) chopped celery with leaves
- 3 cup(s) crushed garlic cloves
- 8 cup(s) fat-free, reduced sodium chicken broth
- 2 cup(s) dried yellow lentils
- 4 teaspoon(s) ground cumin
- 2 bay leaves
- 2 tablespoon(s) tomato paste
- 1 cup(s) chopped parsley
- 2 tablespoon(s) lemon juice
- 1 (14 1/2 oz) can diced tomatoes
Directions
In a large pot, heat oil over medium heat. Saute onions, carrots, celery and garlic until soft, about 5 minutes. Add broth, lentils, cumin, bay leaves and paste. Bring to a boil. Reduce heat; simmer until lentils are soft, 30 to 40 minutes. Add tomatoes during the last 10 minutes. Add parsley, lemon juice, simmer 2 minutes. If using dried parsley, put in sooner. Serve in bowls.
