Happy Goji Berry Pilaf
In areas where they grow, goji berries are known as the "happy berries." You'll know why once you try this delicious berry-full dish. It will have you singing happy tunes!
Ingredients
For 4 people
- 1 cup(s) brown rice
- 1 3/4 cup(s) vegetable broth
- 1/2 cup(s) low-fat/lite coconut milk
- 1 tablespoon(s) sesame oil
- 3 teaspoon(s) Braggs Liquid Aminos
- 1/4 cup(s) dried goji berries
- 4 tablespoon(s) fresh cilantro, chopped
- 1/4 cup(s) scallions, chopped
- 1/4 cup(s) unsalted dry roasted peanuts
Directions
Combine rice, broth, coconut milk, sesame oil, Bragg Liquid Aminos, and goji berries in a medium saucepan and bring to a boil. Reduce heat and simmer on low until liquid is absorbed (35 to 45 minutes, depending on rice). Let sit for 5 minutes. Add cilantro, scallions, and peanuts. Fluff and mix with a fork before serving.
You may use soy sauce in place of Bragg Liquid Aminos.
