High-Fiber Banana Bread
Here's a healthful alternative to sugary muffins. Plenty of fruit offers fiber and flavor. Try this bread on a brunch buffet, or wrap up and give as a delicious hostess gift.

- 2 cup(s) all-purpose flour
- 1 teaspoon(s) baking powder
- 1/2 teaspoon(s) baking soda
- 3 medium ripe mashed bananas
- 8 pitted chopped prunes
- 8 pitted, chopped dried apricots
- 1/10 cup(s) fat-free or low-fat milk
- 1/10 cup(s) fat-free or low-fat milk
- 1 cup(s) all-bran cereal
- 1/3 cup(s) softened butter substitute
- 1/3 cup(s) maple syrup
- 2 eggs
Directions
Preheat oven to 350°F. In a small bowl, mix flour, baking powder and baking soda and set aside. In mixing bowl, stir together (mix well) mashed bananas, cereal, milk and dried fruit. Use masher to mix and mash well. Let mixture stand 5 minutes to soften cereal. In mixing bowl, beat butter substitute and maple syrup; add eggs and beat well. Stir in cereal mixture. Add flour mixture, and stirred until combined. Spread batter into a loaf pan coated with cooking spray. Bake at 350°F for about 45-50 minutes or until toothpick comes out clean. Let cool 10 minutes before removing from pan, and cool completely before slicing.
