The last day of Ramadan is a big Holiday celebration. A great eggplant dish to celebrate the new moon.
Ingredients
For 1 people
- 3 ounce(s) eggplants, washed
- 1 ounce(s) tomatoes, washed, peeled and finely chopped
- 1 ounce(s) green bell peppers, washed and finely chopped
- 1/2 cup(s) onions, peeled, washed and finely chopped
- 2 tablespoon(s) parsley, washed and chopped or as much as desired
- 1 mint leaves, washed and chopped or as much as desired
- 1/2 clove of garlic, peeled, washed and chopped
- 1/8 teaspoon(s) salt
- 1 lemon, juice
- 1/2 cup(s) olive oil
Directions
Grill the eggplant until done.
Chop it into small pieces and mix it with the remaining ingredients.
Top with a dash of olive oil.
Serve immediately.
