Lemon Oil Sauce
This lemon oil sauce is a classic Greek creation that is as versatile as it is tasty. It serves as a bright marinade on chicken or fish, and a healthy dressing for salads.
Ingredients

- 1/4 cup(s) lemon juice
- 1/2 cup(s) olive oil
- 1 teaspoon(s) dried oregano
- 1 pinch(es) salt
- 1 pinch(es) pepper
Directions
In a small jar with a tight-fitting lid, add the olive oil, lemon juice, oregano, salt and pepper. Close jar and shake until well blended. Use to brush onto chicken or fish when cooking, and set aside some for serving with the meal.
Shake or stir before each use, as the oil will separate.
