Lobster Napoleon

- 2 slices shallot
- 1 tablespoon(s) smooth mustard
- 20 Mandarin orange wedges
- 1/4 cup(s) orange juice

- 1/2 cup(s) extra virgin olive oil
- 1 Spring mix lettuce
- 2 2-inch-long slices mango
- 2 lobster claws, meat
- 6 thick slices avocado
Directions
Preparation:
1)-For dressing, mix first eight ingredients; set aside.
2)-Put greens on plate, then layer half the mango, half the lobster meat and half the avocado; repeat layers.
3)-Drizzle dressing over all.
