Nutty Caribbean Snapper

Ingredients
For 1 people
- 1 mango, diced
- 1 tablespoon(s) cilantro, fine chop
- 1/4 cup(s) Vidalia onion, rough chop
- 1 teaspoon(s) white wine vinegar
- 1/3 tablespoon(s) mango coulis
- 1/8 teaspoon(s) cilantro oil
- 1 dash(es) salt, to taste
- 1 dash(es) pepper, to taste
- 1 red snapper filet
- 1 egg wash (1 beat egg mixed with water)
- 1 ounce(s) ground macadamia nuts
Directions
To make the chutney, combine the mango, cilantro, onion, vinegar, coulis and cilantro oil. Refrigerate, covered, until needed. Season the fish with salt and pepper; brush with egg wash on one side and coat that side with macadamia nuts. Pan sear, flipping once, until done. Serve nut side up and garnish with chutney.
