Orzo Feta Salad
Talk about a great twist of feta. This Greek-inspired salad is loaded with orzo, feta, cucumbers and a host of other mouthwatering ingredients that are a taste of heaven. Serve it anytime, anyplace.
Ingredients
For 5 people
- 3 1/4 cup(s) orzo pasta, cooked and cooled
- 1 cup(s) cucumbers, cubed
- 4 green onions, chopped (can use red onions, chopped)
- 2 cup(s) feta cheese (crumbled into big chunks)
- 1 cup(s) olives (sliced, and use black olives)
- 1/4 cup(s) olive oil
- 1 lemon, juice of
- 2 teaspoon(s) dried oregano dried oregano (or to taste, can also use 1-2 tbsp. chopped fresh oregano)
- 4 tablespoon(s) chopped fresh parsley
- 1 tablespoon(s) minced fresh garlic (or to taste)
- 2 teaspoon(s) sugar (optional)
- 1 cup(s) mayonnaise
- 1 dash(es) salt
- 1 dash(es) pepper
Directions
In a large bowl, combine all ingredients together; toss well to combine adjusting seasonings to suit taste. Mix in mayonnaise, adding in more to taste. Cover and chill for a minimum of 2 hours.
