Peach Coffee Cake
Have your coffee cake and eat it, too! This diet-friendly splurge is definitely worth a try during that midmorning break – or anytime!
Ingredients
For 9 people
- 1 For Cake:
- 2 cup(s) reduced-fat Bisquick
- 1 egg or egg substitute
- 2/3 cup(s) skim milk
- 1 tablespoon(s) lemon juice
- 4 tablespoon(s) sugar
- 2 small peaches, diced
- 1 teaspoon(s) cinnamon
- 1 For Topping:
- 1/4 cup(s) flour
- 1/4 cup(s) brown sugar
- 1/4 cup(s) nuts, pecans
- 1 1/2 tablespoon(s) butter
- 1/4 teaspoon(s) cinnamon
Directions
Spray an 8x8 baking pan with cooking spray and set aside. Add lemon juice to skim milk and set aside. In a bowl mix together Bisquick, egg, sugar, and 1 tsp cinnamon. Add milk and stir until everything just comes together. Add peaches and gently stir until they are mixed in. Pour batter into prepared pan. In a small bowl mix together flour, brown sugar, 1/4 tsp cinnamon, butter and pecans. Mix with a fork or your hand until mixture resembles coarse crumbs. Sprinkle on top of batter. Bake in a 400-degree oven for 25 minutes or until done.
