Seafood Sausage

It may sound a bit bizarre, but there's nothing fishy about this seafood sausage. Swimming in goodness, it's white fish, salmon and shrimp all rolled into one.

Ingredients

For 12 people

  • 5 1/3 ounce(s) white fish
  • 5 1/3 ounce(s) salmon
  • 5 1/3 ounce(s) shrimp
  • 1/2 teaspoon(s) salt
  • 1/10 ounce(s) fennel seeds
  • 2 egg whites
  • 1/3 teaspoon(s) white pepper
  • 1 Juice from 1 lemon
  • 1/10 teaspoon(s) parsley
  • 1/10 teaspoon(s) paprika

Directions

Combine all ingredients in food processor. Chop until coarse. Do not over-chop.Lay out one 14-inch long strip of plastic wrap. Spoon out sausage lengthwise on film. Roll into log 1 inch thick. Tie up log on ends and tie every 6 inches. Submerge sausage, still in the plastic wrap, in boiling water. Cook 1-5 minutes. Cool, unwrap and serve.
