Southwestern Party Salad
Those same old salads can become tiresome over time. That's why this southwestern party salad will have you running for the border.
Ingredients
For 2 people
- 2 tablespoon(s) olive oil
- 6 teaspoon(s) lime juice
- 1 tablespoon(s) lemon juice
- 1/4 teaspoon(s) garlic powder
- 1/2 teaspoon(s) cumin
- 1/4 teaspoon(s) oregano
- 1 boneless chicken breasts
- 4 cup(s) romaine lettuce
- 16 cherry tomatoes
- 1 avocado, peeled and sliced
- 1/4 cup(s) Swiss cheese, shredded
- 4 ounce(s) tortilla chips, unsalted, crumbled
- 2 tablespoon(s) sour cream
- 1/4 cup(s) salsa, low sodium
Directions
Combine first 6 ingredients in a plastic zipper bag. Add chicken breast and marinate at least two hours, turning occasionally. Grill or sauté chicken breast until no longer pink. Cut into 1/2 inch think slices. Divide lettuce between two plates. Top with tomatoes, avocado and chicken. Sprinkle with cheese and tortilla chips. Mix sour cream and salsa and pour over.
