Spinach Quiche
Quiche the cook. This spinach and Swiss quiche is a great dinner when you're short on time and hungry for a rewarding meal. Toss the ingredients together and you'll have a gourmet offering in no time.
Ingredients
For 6 people
- 1 pkg. refrigerated pie crusts
- 2 tablespoon(s) butter or margarine
- 1 small onion, chopped
- 2 green onions, chopped
- 4 tablespoon(s) chopped fresh parsley
- 1 1/4 cup(s) frozen chopped spinach, thawed and well drained
- 1 tablespoon(s) Worcestershire sauce
- 1 teaspoon(s) salt
- 1/2 teaspoon(s) pepper
- 3 large eggs
- 1/4 cup(s) milk
- 1 cup(s) shredded swiss cheese
Directions
In a medium bowl, beat cream cheese with electric mixer until creamy. Beat in eggs, evaporated milk and red pepper. Squeeze spinach between paper towels until almost dry. Stir spinach and ham or onion into egg mixture. Pour into frozen pie crust. Sprinkle with salt and pepper to taste. Bake in a preheated 350-degree. oven on a preheated baking sheet for 55 to 65 minutes, or until a knife inserted in center comes out clean. Variation: Top quiche with tomatoes for added color.
