Stuffed Pork Chops
Try this dish when you need a switch from plain old pork chops. The stuffing is sweet and complements the flavor of salty pork perfectly.
Ingredients
For 4 people
- 4 thick pork chops, 1.5 inchws
- 2 apples, unpeeled, cored, chopped; For Filling
- 1/2 cup(s) raisins; For Filling
- 3/4 cup(s) fresh bread crumbs, (from French bread); For Filling
- 3 teaspoon(s) brown sugar; For Filling
- 1/2 teaspoon(s) black pepper; For Filling
- 1/2 teaspoon(s) salt; For Filling
- 1/2 teaspoon(s) ground cloves; For Filling
- 1 floz melted butter; For Filling
- 2 tablespoon(s) chopped chives or parsley; For Filling
- 2 tablespoon(s) butter; For Filling
- 1 cup(s) beef broth; For Filling
Directions
Trim excess fat from pork chops. Make a slit to form a pocket in fat end of each pork chop. In a bowl, combine apples, raisins, bread crumbs, brown sugar, pepper, salt and cloves. Add melted butter and chives or parsley. Mix well. Let stand for a few minutes for flavors to blend. Stuff each pork chop with a generous portion of stuffing. Skewer shut with toothpicks. Heat butter in heavy skillet. Brown chops slowly over medium heat, about 5 minutes on each side. Add beef broth. Bring to a simmer. Simmer pork chops over low to medium heat for about 30 minutes or until tender. Be sure to simmer pork chops over low to medium heat rather than over high heat on the stove in order to keep them tender. Remove toothpicks. Transfer to serving platter. Pour pan juices over pork chops and serve immediately with a green salad and steamed broccoli.
