Sweet Potato Waffles

Ingredients

For 4 people

  • 2 cup(s) all-purpose flour
  • 1 cup(s) mashed sweet potatoes -- already cooked
  • 2 eggs -- lightly beaten
  • 1/4 cup(s) skim milk
  • 1/4 cup(s) butter -- melted
  • 3 tablespoon(s) sugar
  • 2/3 teaspoon(s) baking powder
  • 1 dash(es) salt

Directions

In a medium bowl, whisk together the milk, potatoes, butter and eggs. In separate bowl, whisk together flour, sugar baking powder and salt. Add dry ingredients to wet ones. Stir well. Cook waffles at your favorite setting.
