Vegan Boston Brownies
A chocolate lover's dream, these brownies eliminate eggs and dairy making them completely vegan. Instead, they draw upon the great tastes of tofu, applesauce, soy milk and more. They're so good that nobody will be able to tell the difference.
Ingredients

- 108 teaspoon(s) natural cane sugar (2.25 cups)
- 1 1/2 cup(s) all purpose flour
- 1 1/2 cup(s) unsweetened cocoa powder
- 1 1/2 teaspoon(s) baking powder
- 1 1/2 teaspoon(s) baking soda
- 1/8 teaspoon(s) salt
- 1 cup(s) unsweetened applesauce
- 8 ounce(s) soft tofu
- 3/4 cup(s) chocolate soymilk
- 2 teaspoon(s) vanilla extract
Directions
Preheat oven to 350 degrees and coat 9x13-inch baking dish with cooking spray. Combine sugar, flour, cocoa powder, baking powder, baking soda and salt in large bowl. Combine applesauce, tofu, soymilk and vanilla in food processor, and process until well blended. Add tofu mixture to dry ingredients, and mix well. Scrape batter into prepared pan. Bake until batter is set and top is dry, 45 to 50 minutes. Cool in pan; cut into bars and serve.
