Must-Have Holiday Dishes
Hot Spinach Artichoke Dip
- 1 10oz. package frozen chopped spinach, thawed
- 1 cup mayonnaise
- 1 cup grated parmesan cheese
- 1 tsp. minced or crushed garlic
- 1 14oz. can artichoke hearts (quartered and marinated)
- 1 cup shredded Colby-jack or Monterey Jack & Cheddar blend cheese
- Fresh ground pepper
Drain the spinach and squeeze well until all moisture is removed. Crumble into large mixing bowl and add all ingredients except the shredded cheese. Mix well.
Spray a 1-quart casserole dish with cooking spray and spoon mixture into dish, spreading evenly. Top with shredded cheese. Cover and bake for 15-20 minutes or until cheese is melted and bubbly.
Serve with toasted bread slices, crackers, thick potato chips, or sturdy vegetable slices (celery, bell peppers, carrots).
